Produced on the island of Negros in the Philippines, Don Papa has, since its inception, been closely associated with a region known for its sugarcane. Locally nicknamed “Sugarlandia,” this fertile volcanic island, situated in the foothills of Mount Kanlaon, provides an almost naturally cinematic backdrop for the brand. Don Papa draws its identity from this setting: a fusion of lush vegetation, colonial heritage, the revolutionary figure of Papa Isio, and a carefully crafted baroque aesthetic.
Port Quincentennial stands out for its aging process. The final blend combines rums aged 7 and 10 years. The process begins with two years in bourbon barrels, followed by at least five years of aging in port barrels. This choice shapes the cuvée’s character: greater roundness, a deeper richness, and an aromatic profile marked by spices, ripe fruits, and woody notes. The press release notes that this aging in port barrels gives the rum a distinctive complexity, enriched by the history of Portuguese wines.
