A few days ago, we were invited by G.H. MUMM to discover its SUPPER CLUB, a private men’s club celebrating Gentlemen who appreciate champagne and its protocols.
On this occasion, we discovered the penthouse of Monsieur Vigato, the Apicius’ two-starred chef, who cooked a dinner for us accompanied entirely by Champagne.
Jean-Pierre Vigato, one of the most talented French chefs of his generation, has long been a fervent fan of G.H.MUMM champagnes, so it was only natural that he should be the chef who symbolized excellence, accompanying the Champagne house in their finest gastronomic pairings.
To begin this feast: spider crab meat with shellfish and fennel jus accompanied by Mumm Blanc de Blancs.

Then JP Vigato’s Croque Monsieur with black truffle accompanied by Blanc de Noirs.

Gourmand & Sophistiqué
58% Pinot noir, 42% Chardonnay
Appearance: bright yellow, with golden hues.
Nose: fresh, tangy aromas, vanilla, full-bodied white fruit.
Palate: immediate power on the palate, followed by a sensation of freshness.
Finish: long and delicate.
For dessert, let’s avoid Champagne! Cognac is an excellent alternative. Warm Madeleine with lemon yoghurt sorbet.

Combining each G.H.MUMM Champagne Grand Cru with an exclusive creation is the gastronomic experiment that Jean-Pierre Vigato undertook in the kitchen. Interview.
How did your interest in champagne wine come about?
” In addition to my apprenticeship in the kitchen, I had also taken up oenology for pleasure. And while I was learning the ropes at the 2-star restaurant “Chez Albert”, I was put in charge of the cellar. 30,000 bottles. It was an experience that counted for a lot, and gave me the opportunity to discover G.H.MUMM champagnes.
What do you particularly like about G.H.MUMM champagnes?
“The quality standards of this famous Champagne House echo my own demands as a Chef. I like to imagine these haute gastronomie champagnes in association with my culinary creations.”
Which of the G.H.MUMM champagnes would you recommend?
“Of course, the G.H.MUMM name is intimately linked with the mythical Cordon Rouge. But the prestige cuvées, Blanc de Blancs, Blanc de Noirs and especially Brut Sélection are 3 exceptional Grands Crus that form a fine trilogy to be discovered.”
What culinary combinations inspire you?
“Because it’s a complete champagne, in the spirit of the great champagnes, Brut Sélection is the gastronomic champagne par excellence. It is both fresh and intense. I recommend serving it at a slightly higher temperature than usual, in a wine glass. This reveals all its aromatic complexity. I pair it with white meats or water game. Today, I chose it to accompany this starter of langoustines, simply cooked in their shells, with their coral in salted butter, accompanied by a langoustine tartar with a knife.
The Blanc de Blancs, with its elegance, freshness and finesse, reminds me of lace. I’d like to pair it with an iodized dish or, more unexpectedly, a cep and chanterelle salad!
The Blanc de Noirs is more structured and daring. I’d pair it with pretty poultry, powerful lobster or sweetbreads.
The idea behind this event was of course to highlight the G.H. MUMM Champagne Protocols, and in particular the ritual of sabering. The sword has already been reinterpreted by artists such as Patrick Jouin and Ross Lovegrove this year.
Ideal for socializing during the festive season, you can saber champagne with a saber, a knife or even a spoon – it’s all in the gesture. But for the more timid, it’s possible to practice on mobile or online.
