Tasty Alba White Truffle Ice Cream
The daring combination of Alba white truffle and ice cream is a real success. The complexity of the truffle’s flavors is captured and rendered naturally, without artifice. The delicate white truffle, which cannot be cooked, is dried and ground to a powder. It is then cold-infused for over 12 hours in a mixture of whole milk, fresh cream and sugar, preserving its authentic taste. This preparation is then turbined to create Alba white truffle ice cream. On tasting, you’ll discover the intensity of the truffle’s flavors, with characteristic notes of alliaceous plants and honey, combined with the sweetness, freshness and lightness of the ice cream. A true delight to be savored in the restaurant, for a guide price of €15.
The Magnificent Chocolate Truffle Trompe-l’Œil
Pascal Brunstein, one of France’s finest chocolate craftsmen (MOF), has created a strikingly realistic dark chocolate truffle for the Maison de la Truffe. Beneath a dark chocolate shell made from a Mexican grand cru, lies an incredibly smooth blend of gourmet praline and gianduja, enhanced by crunchy shards of caramelized Iranian pistachio. This 150 g truffle is a marvel to share in the restaurant, and will soon be available to take away from the store, for a guide price of €22.
