Ritz Paris Le Comptoir: a madeleine for Octobre Rose, a Tarte Tatin for autumn

For Octobre Rose, Ritz Paris Le Comptoir is renewing its support for the association Tout le monde contre le cancer for the third consecutive year. This commitment goes beyond a seasonal communications exercise and, this year, finds its first edible expression by chef Joris Theysset since he took charge of the establishment.

Its creation is called Madeleine Rose & Hibiscus, as delicate as it is generous according to the house. Hibiscus gives it its natural pink hue, while a soft rose and hibiscus caramel brings floral and tart notes to its centre; a few dried rose petals complete its appearance. Sold for 5 euros each or 30 euros for a box of five, the madeleine donates all its profits to the association, which works in more than 180 hospitals in France to improve daily life for people with cancer, their loved ones and healthcare workers.

The season’s other new arrival is not a charitable initiative, but part of a deeper exploration of the house’s pastry repertoire. The chef has created a new Tarte Tatin as a natural continuation of his work on summer fruit tarts. A disc of thin apple slices, slowly cooked in a delicate caramel, sits on a sweet pastry base, with a creamy caramel centre and a lightly tart cream to balance the whole.

“For autumn, I wanted to carry forward the work done on the summer fruit tarts, particularly the shape of the pastry, which recalls the iconic arches of our Maison,” says Joris Theysset. “The season also calls for greater indulgence: this first Tarte Tatin from Ritz Paris Le Comptoir was a fine opportunity to express it.” Bringing an architectural form—the Ritz arches—into dialogue with a classic as codified as Tarte Tatin says much about how the house now regards seasonal pastry as an extension of its visual identity.

Both creations will be available from Thursday 1 October to Wednesday 18 November 2026 at the two Paris locations of Ritz Paris Le Comptoir, on rue Cambon and rue de Sèvres, as well as through Click & Collect and delivery via the house’s website.

Between an explicit commitment to solidarity and a pastry exercise in style, these two additions remind us that an institution like the Ritz can embrace the seasons without ever giving up its own vocabulary.
