On Tuesday March 22, the Michelin Guide France 2022 star award ceremony took place in Cognac.
The expert jury awarded a star as well as the Prix Passion Dessert to the gastronomic restaurant La Rotonde at the Hôtel du Palais in Biarritz, which in 2018 joined the Hyatt group through its prestigious brand The Unbound Collection by Hyatt.
“We are delighted and proud to learn that the Michelin Guide 2022 has awarded a star and the Prix Passion Dessert to the Hôtel du Palais restaurant La Rotonde. In 2021, the partial reopening of the Hôtel du Palais in the midst of a pandemic and after 3 years of renovation work was a real challenge. As the emblematic palace of the city of Biarritz and the surrounding region, it had to live up to the very high expectations of its guests,” says General Manager Alessandro Cresta.
This has now been achieved with the arrival of two talented new chefs at the helm of the restaurants: Aurélien Largeau, Chef des Cuisines, and Aleksandre Oliver, Chef Pâtissier, who have been working together since 2021, forming a duo as energetic as they are creative.
Together, and with their respective brigades, they put their passion and generosity at the service of their customers every day, introducing them to inspiring and innovative cuisine featuring local and seasonal produce.
Hyatt, head in the stars
This is the 4th star awarded to a Hyatt hotel restaurant in France.
Indeed, the Park Hyatt Paris Vendôme and its talented Chef Jean-François Rouquette* have been boasting a star at the Pur’ gourmet restaurant since 2012, and Christian Sinicropi** proudly wears 2 stars at La Palme d’Or, the gourmet restaurant at the Hôtel Martinez in Cannes, also a hotel in The Unbound Collection by Hyatt .
This new award only reinforces the positioning of The Unbound Collection by Hyatt hotels: extraordinary establishments, rooted in their history, inviting guests to discover the unexpected.

The Hôtel du Palais in Biarritz, the Hôtel Martinez in Cannes and the Hôtel du Louvre, in the heart of Paris, join the portfolio of 11 Hyatt hotels in France.
