As the nights lengthen and the golden-tinged leaves begin to dance in the autumn wind, there’s that effervescence in the air that precedes the festive season. This year, the Domaine Grosbois winery enriches the wine market with its new cuvée Gabare 2021, an elegant, fruity Chinon wine that will sublimate your festive table.
Gabare 2021 : A tribute to heritage
Imagined by brothers Nicolas and Sylvain Grosbois, this cuvée is a vibrant tribute to the legendary Gabares, the boats that have shaped the history of the Chinon region’s shores, and to the sailors and fishermen who have contributed to the vitality of these lands.
The Secret of an Exceptional Terroir
The magic of Gabare 2021 lies in the meticulous blending of twelve historic parcels, preserved since the 15th century. Perched on the heights of the estate, these sandy-clay soils give the wine its complexity and depth. The terroir is also expressed through two islets in the valley, dominated by gravel on limestone, giving this wine olfactory and gustatory diversity.
A Capricious Season, A Daring Vintage
The 2021 vintage was not without its challenges. From persistent night frosts in spring to an exceptionally hot, dry summer, each stage shaped the character of the wine. A timely rainy spell in September finally allowed optimal ripening of the grapes, presaging a wine with nuanced, deep flavors.
The Art of Winemaking
Biodiversity is central to the practices of Domaine Grosbois, which has been Ecocert-certified since 2012 and Demeter-certified since 2019. Here, hand-picking coincides with optimal grape maturity. Indigenous yeasts are favored during vinification, and the wine is then aged for 11 months in concrete tanks to preserve its purity and freshness.
A Symphony in the Mouth
On the nose, Gabare 2021 reveals a captivating bouquet of fresh peony, a characteristic touch of Cabernet Franc in this type of vintage, complemented by hints of licorice. The palate develops with astonishing roundness and delicacy, revealing smoky notes and the depth of Cabernet Franc.
Perfect Pairings for the Holidays
What better way to sublimate this cuvée than with festive dishes such as capon stuffed with morel mushrooms or a savory aumônière à la normande? Not forgetting a selection of mature cheeses to crown this gastronomic experience.
Domaine Grosbois once again proves its talent for creating wines that are not only a pleasure for the palate, but also an eloquent expression of the Chinon terroir. The Gabare 2021 cuvée is available from wine merchants, at the domaine and in CHR for €19.50.
