Domaine Saint Paul in the Rhône appeals to us with its 2016 rosé, a wine of charm and spirit that will delight discerning epicureans.
If there’s a rare gem in the Rhône Valley, it’s the Domaine Saint Paul, owned by the Jeune family of Châteauneuf-du-Pape since 1958. Located in Châteauneuf-du-Pape, this 22-hectare gem (14 ha in Châteauneuf-du-Pape, 5 ha in Côtes du Rhône and 3 ha in Vacqueyras) has been cultivated and converted to organic farming since 2009.
This pure, delicate Grenache tells the story of its precious terroir on the heights of the Sarrians commune. The 40-year-old vines express themselves perfectly on alluvial terraces of gravel on clay-limestone layers. This rosé has benefited from the very best care: hand-picking followed by systematic sorting of the grapes. Vinification is meticulous, with direct pressing to preserve the pale color and fresh fruit notes, cold settling and controlled alcoholic fermentation at 16-18° in stainless steel tanks. No malolactic fermentation to preserve freshness and fruitiness. Aged on fine lees in stainless steel tanks.
The result is a lovely rosé, fruity and delicious. Ideal as an aperitif under an arbour, or with a Provençal-style vegetable terrine, grilled prime rib, salmon tartar, fresh squid or red fruit soup.
