You enter an authentic woody-indus’-chic decor, between a large Italian grocery store and a cosy café.

Since we’re in the heart of the Marais district, we thought we’d be open all day, with long all-day service. So we had a blast cooking up a brunch menu that included fluffy maxi pancakes with buffalo ricotta and blueberries, big comforting brioches for the morning with gianduja or Amalfi lemon, eggs benedict with Fiorentina or an omelette with black Molise truffles. On the coffee side, we roast Brazilian and Guatemalan coffees, and picked up a magnificent Belle Epoque machine in Italy.
And then we went for a big wood-fired oven, because at Big Mamma, pizza napoletana is sacred. But this time we wanted to give it a twist. We know that since the very beginning we’ve had customers who are gluten intolerant or who simply want to eat less gluten. With the idea of exploring all areas of cuisine, we set ourselves the challenge, for the Biglove Caffè, of recreating our favorite pizzas in a gluten-free version, using corn, buckwheat and rice flours, while remaining generous and gourmet. We also revisited a few desserts. A good challenge in the kitchen, but gluten-free doesn’t mean no whipped cream, no butter, no cream, no chocolate, no big kick!
