Can you pair an entire meal with champagne? That’s the challenge set by Jean-Pierre Vigato, the two-starred chef at theApicius, who honors the Grands Crus of the G.H.MUMM House with exceptional food and champagne pairings.
In the kitchen, Jean-Pierre Vigato lent himself to a gastronomic experiment, creating an exclusive taste experience for each Grand Cru of G.H.MUMM champagne: dishes of excellence paired with the fine bubbles of Blanc de Blancs, Blanc de Noirs and Brut Sélection, “three exceptional Grands Crus that form a beautiful trilogy to discover”.
But in concrete terms, what form does a G.H.MUMM Grands Crus gourmet lunch imagined by Jean-Pierre Vigato take?
The Blanc de Blancs (100% Chardonnay from Cramant), with its finesse and elegance, its nose of white flowers and fresh fruit, and its mineral notes, is the perfect accompaniment to marinated salmon or mussels and cockles with salad. The Chef also likes to pair it “with an iodized preparation or, more unexpectedly, a cep and chanterelle salad!”
Then comes the Brut Sélection (58% Pinot noir, 42% Chardonnay), gourmand and powerful with fresh, tangy white-fruit aromas, to match raw and grilled scallops and white truffles. Jean-Pierre Vigato “pairs it with white meats or waterfowl” or a “starter of langoustines, simply cooked in their shells, with their coral in salted butter, accompanied by a langoustine tartare au couteau”.
The Blanc de Noirs (100% Pinot noir from Verzenay), structured and fresh, in turn sublimates the dish, sea bass and langoustine, semi-smoked and whipped cream with its notes of dried fruit and pastry, nougat, coffee and vanilla. Another match? “A pretty poultry, a powerful lobster or sweetbreads”.
