Edern, a feast for the palate

A few weeks ago, we headed to the Golden Triangle to discover a restaurant as festive as it is refined. Impeccable service, lively atmosphere, seductive dishes.

A stone’s throw from the Arc de Triomphe, in a quiet side street, Chef Jean-Edern Hurstel has opened a luxurious, atypical space with two facets. It’s a gourmet restaurant by day, and a 360 m2 party space by night.

Light grey armchairs, wood panelling, works of art on the walls…

At lunchtime, the neighborhood’s business clientele appreciate this modern restaurant, with its inventive yet divine cuisine, which meets their
expectations. A hushed atmosphere, a smile from the owner – it’s all there.

In the evening, the atmosphere changes completely. Subdued lighting, DJs at the turntables, and always the same quality on the plate. Small dishes to share, inspired by fusion food. Both floors come alive, and the
cocktail bar is full (with a list of 45 cocktails).

You can meet up on the first floor for a cocktail at the bar or a culinary experience for two, dine with eight friends at the table d’hôte under the glass roof, and extend the evening by heading downstairs to the Lounge. And the magic is always in the dishes. Given his experience, Jean-Edern knows how to do it all, and does it with taste.
You can opt for traditional gourmet cuisine, made with fresh local produce but with a twist. That’s the artist’s signature.
The menu changes 4 times a year.

At midnight, it’s on fire. The same quality reigns on the plate. Jean-Edern insists on it. He wants the service to be impeccable, the food esquisite and the atmosphere
delirious. This is what he calls his 3 B’s: “Good dining, Good service, Good ambiance”. For the evening, he has created small fusion dishes to share, inspired by his experience abroad and his great originality, tapas-style hors d’oeuvres but in a 3-star version. It’s fun and delicious
. Wait… Yuzu shrimp, lean sashimi, beef with spices and daikon, caramelized chicken wings with ginger…

Jean-Edern is a super-qualified chef, an adventurer who loves travel and nature, and a vintage car enthusiast who will soon be creating a rally in his name. But what really gets him going is giving pleasure and seeing people enjoy themselves. Some will recognize him as the super-friendly Top Chef contestant. His image matches reality. Jean-Edern likes to party, and his restaurant is a bit like home: he welcomes you at lunchtime, and will be
on Edern’s doorstep in the early hours of the morning… Behind the welcoming host, however, lies a great professional. He began his career with some of the most prestigious Michelin-starred chefs, so he knows
all the twists and turns of haute gastronomie à la française: Claude Legras in Geneva, Alain Senderens at Lucas Carton, Alain Passard at L’Arpège.

He then left Paris, ready for travel and new experiences. His first stop was in Great Britain, at Gordon Ramsay’s restaurant L’Aubergine. He returned to Alsace, France, to work alongside Paul and Marc Haeberlin, before heading for Monaco and Alain
Ducasse’s Louis XV. In 2007, he launched his international career. First in Dubai, at the
Jumeirah Emirates Towers Hotel, then as chef at the Shangri-La in Abu Dhabi.

He perfected his experience in 2010 at
Dubai’s Jumeirah Zabeel Saray, with 450 chefs under his command and the challenge of opening
12 new restaurants. A successful experiment, since that same year he was named Chef of the Year by the Abu Dhabi Gourmet Festival. This is the secret of the smiling savoir-faire and inventive, relaxed yet infinitely serious gastronomy
that characterizes
Jean-Edern.

Jean-Edern will be leaving Dubai to head up the kitchens at the luxurious Palace Le Peninsula in Paris, ranked the most beautiful hotel in Asia for 120 years. An extraordinary experience for this 34-year-old Chef, who will set up 3 restaurants, supervise 6 Chefs and 82 cooks… With the same
passion! This will be his last successful adventure before opening his own place, 6 rue Arsène Houssaye, in 2018. A vast space where the more guests he has, the more radiant he is, without ever losing his good humor.
