The Shangri-La Hotel, Paris celebrates Epiphany!

To celebrate the New Year and the traditional feast of Epiphany, Michaël Bartocetti, Pastry Chef at the Shangri-La Hotel, Paris, has imagined a gourmet galette des rois for a moment of sharing and conviviality. Inspired by the Bauhinia, an exotic shrub whose flowers are reminiscent of those of an orchid, Chef Bartocetti has chosen to honor vanilla, whose delicate aroma comes from the pod produced by an orchid. The crispy caramelized puff pastry of this galette offers intense vanilla flavors: Madagascar, Taïthi, and roasted vanilla with a subtle licorice aroma. At the heart of the puff pastry is an unctuous almond frangipane cream with a floral vanilla fragrance, to delight the palate of sweet tooths. Finally, the puff pastry is topped with slivered almonds caramelized with honey and Taïthi vanilla, which crunch under the tooth, playing on the duality of textures and flavors. Garnished with a Bauhinia flower, emblematic of the Hong Kong flag and a reminder of the Asian origins of the Parisian Palace, as a bean to designate the queen and king of the day, this galette des rois will delight gourmets young and old alike!
