For Epiphany, Chefs Yannick Alléno and Aurélien Rivoire have concocted two unique creations that promise to enchant gourmet palates. Their culinary diptych, Galette des Reines and Tablette des Rois, is a bold, modern interpretation of the traditional feast of Epiphany.
The Galette des Reines, priced at €42 and available from January 1 to 17, is a work of art in itself. Its composition alternates between an intense almond cream and a sugar-free chocolate almond cream, offering a play of textures and flavors. The galette’s light, crunchy puff pastry is complemented by a chocolate corn crisp, and the whole is generously dusted with grated cocoa. The originality of this galette also lies in its clover-shaped bean, which offers the chance to win the Tablette des Rois.
The Tablette des Rois, available at 14€ from January 1st to 17th, is a gourmet answer to the Galette des Reines. It features an intense fresh almond cream, marbled with a tender dark chocolate cream. Enrobed in exquisite dark chocolate, this bar is the ideal gift that queens give to their king(s).
