When people think of the Corbières, the collective imagination spontaneously conjures up the powerful red wines of the Languedoc. Yet this region’s winemaking history is not written solely in red. For several decades now, certain wineries have been exploring another facet of these landscapes of garrigue and white stones: that of Mediterranean white wines.

The white wine from Château Étang des Colombes belongs to this unassuming yet essential family.

This wine is a blend of Grenache Blanc, Macabeu, and Bourboulenc—three grape varieties deeply rooted in the winemaking heritage of southern France. Grenache Blanc generally provides structure and body. Macabeu contributes to the overall balance, while Bourboulenc helps preserve the wine’s liveliness and freshness—two qualities that are particularly sought after in a Mediterranean climate.

The wine’s identity is also rooted in its terroir. The vines are planted in stony, clay-limestone soils. This combination plays a decisive role in the balance of the grapes: the clay retains moisture, while the limestone helps regulate the vines’ vigor and promotes the expression of profiles that are often more taut and briny.

The winemaking process is designed to preserve the fruit’s character. A brief skin contact precedes pressing and cold settling. Fermentation then takes place under temperature-controlled conditions for approximately eleven days. These technical choices are designed to protect the most delicate aromatic compounds and preserve the varietal character of the grapes.

This profile meets contemporary expectations for southern white wines: preserving the sunny character of the climate without sacrificing balance.

The suggested pairing with seafood, grilled fish, and shellfish also serves as a reminder of a fact that is often overlooked: the great white wines of the Mediterranean are, first and foremost, coastal wines. Their primary purpose is not to showcase power but to complement seafood dishes where freshness and saltiness play a central role.

In a wine-growing region where the Corbières are still primarily associated with red wines, this cuvée serves as a reminder that the future of the Languedoc also lies in the rediscovery of its historic white grape varieties. A history that is less spectacular, but perhaps more revealing of the true diversity of the Mediterranean wine region.
