A few weeks ago, we discovered an extraordinary winegrowing estate in the heart of Provence. In the heart of Provence, between Sainte Victoire and Monts Auréliens, Les Terres de Saint Hilaire boasts 100 hectares of sun-drenched vines over a total area of 1,500 hectares. This eco-responsible estate is also open to tourism, with charming guest houses.

DOMENI
The traditional Terres de Saint Hilaire cuvée
Discover the character of St Hilaire through this cuvée.
Whether white, rosé or red, Domeni is above all a wine of the terroir. This cuvée is characterized by its fruity, crisp aromas and wild, garrigue-like
flavors. Length and structure make it a complete wine. The plots are selected according to their exposure, and are well representative of the St Hilaire terroir. Harvested at 5 a.m., the grapes are protected from oxidation for 24 hours at 8°C. This rigorous clarification process brings out the cleanliness and frankness of the grapes, revealing the full strength of the terroir. Alcoholic fermentation takes place for 3 weeks in temperature-controlled vats at 18°C, so that terroir takes precedence over technological aromas. When technology combines with terroir know-how, you get Cuvée Domeni!
Domeni Blanc 2013
Very pale yellow color with green highlights. Nose of citrus and exotic fruit, or passion fruit. The palate is supple, aromatic and heady. Lots of finesse and expression. With a good length on the palate, this wine is light
and round, and is ideal with shellfish and fish. Serving temperature: 12°C Grape varieties: Rolle, Clairette. 12.5% Vol. IGP Var.
Domeni Rosé 2013
A very pale, not very intense pink, with purple highlights. The nose is expressive, with notes of strawberry, raspberry and amyl candy.The palate is straightforward, with a lovely sweetness, very aromatic and intense in red fruit. The finish is lively and well-structured. This wine goes well with grilled white meats or spicy dishes.

Médaille d’Or CGA Paris 2012 This wine boasts a very intense red color with some violet highlights.
The nose is intense with mixed red and black fruits, with hints of leather and undergrowth beginning to appear.
The palate is supple, tannic, powerful with aromas of candied black fruits, licorice and cocoa. The finish is round and tannic, with good length. A full-bodied wine with good structure and a warm, persistent finish.

LE PRIEUR
The emblem of Terres de Saint Hilaire
The perfect union between the nobility of a terroir and the passion of a winemaker. Elegance and delicacy are the hallmarks of this cuvée.
From the oldest plots on the estate (25 to over 30 years old), and naturally the lowest-yielding, the grapes are picked at over-ripeness for both whites and reds, to concentrate the aromas.
After a long maceration, from 4 to 12 hours for the whites and rosés, the juices obtained by pneumatic pressing are settled and fermented at low temperature for 3 weeks to bring out all the concentration, strength and richness of the terroir and grape varieties. For red rai sins, maximum concentration is sought during vatting, which lasts between 3 and 4 weeks, followed by aging in barrels for an average of 18 months, to guarantee a bouquet and aging capacity of up to ten years.

Prieur Blanc 2011
Very pale yellow color with green highlights. Nose: aromas of exotic fruits and lychees, enveloped in hints of vanilla, which
recalls the presence but not dominance of barrel ageing. Mineral notes of flint, iodine, nuts and
honey. Palate: the fullness is accompanied by a velvety, unctuous quality that carries through to the finish, slightly lifted by a hint of acidity. The same complex aromas are present and persistent. Aromas of vanilla mingle with
exotic fruit. Serve chilled but not iced, as an aperitif or with bouillabaisse and spicy fish and seafood dishes

Prieur Rosé 2013
Pale pink, not very intense, with light violet highlights. Complex nose of citrus (lemon, grapefruit) and red fruit (raspberry). The palate is supple, ample, complex, very fruity and tannic. Good presence and length on the finish. Round, fat, aromatic and unctuous. An aperitif wine that can withstand freshness and open up
throughout the meal. Its roundness and body will accompany your stuffing, red mullet, grilled prawns and other scallops. Enjoy chilled, but not iced, to avoid destructuring the wine in the mouth. Prieur Rouge 2010
Bronze Medal Concours des Grands Vins de France Mâcon 2012. Intense, deep ruby-red color
with purplish highlights. Powerful, fleshy nose, with hints of leather and red and black fruit, such as blackcurrant, blackberry, cherry and prune. A hint of oak and vanilla complete the aromatic palette.
Taste: a clean, acidic attack, followed by a sweet mid-palate. The finish is tangy. The structure is
present, supple and the tannins are coated. The aromatic balance is made up of animal notes of leather, fruity and spicy notes: licorice, black fruit, a few notes of roasting.

Prieur Rouge 2011
Bronze Medal at Decanter World Wine Award London 2013 and Concours des Vins de Provence 2013. Very intense deep purple-red color with violet highlights. First nose of crushed black fruits, blackberry jam with slight animal and game notes that appear with aeration. The palate is rich and complex, quite alcoholic. Then woody notes appear. The palate is lively, straightforward and round, then the tannins develop to finish on a persistent note of red fruit. The tannins are coated by the wine’s substance. The palate is heady, enveloped by tannins
and alcohol, which give the wine its beautiful length. Black fruit aromas (prune, blackcurrant, blackberry, etc.) are found on the palate, along with leather and game aromas. This wine can be enjoyed now with truffle brouillade, game or dishes in sauce, but can wait 4-5 years for the tannins to mellow. Serving temperature: 18°C Grape varieties: 40% Syrah, 60% Cabernet Sauvignon.14% Vol. AOP Coteaux Varois en Provence.
TENTATION
The sin mignon of Terres de Saint Hilaire Vin plaisir, Vin désir…
Available in white and rosé, this cuvée is dedicated to freshness and gourmandise. It’s a wine for pleasure, obtained by short maceration of the grapes, but with low-temperature fermentations to bring finesse and sweetness.
To accentuate this suppleness on the palate, the wine retains a few grams of residual sugar to soften the freshness and coat the palate with a silky, unctuous sweetness. Aging on fine lees for 2 to 3 months adds roundness and complexity. As an aperitif or at brunch, this delicious wine will wake up your taste buds!
Tentation Blanc 2013
A gourmet wine. Very pale color with green highlights. The nose is predominantly mineral with some floral notes (lime blossom, acacia). The palate is full-bodied, supple and flattering, with peach and lychee aromas. The finish is slightly acidic.
Enjoy as an aperitif or with cocktails. Serving temperature: 12°C. Grape varieties: Rolle, Clairette. 12% Vol. IGP Var.
Tentation Rosé 2013
A delicious wine. The color is a very pale, brilliant pink. The slightly muscat nose reveals notes of white-fleshed fruit (vine peach, pear). The palate is supple, round and greedy, with notes of banana, pear and lychee.
This wine, with its excellent length, is delicious, easy to drink and not rough. Enjoy as an aperitif, with cocktails or at a picnic. Serving temperature: 12°C. Grape varieties: Cinsault, muscat de hambourg. 12% Vol. IGP Var.
