Opened last May in the Opéra district of Paris, Hakata Choten is a ramen – Japanese noodle – restaurant specializing in authentic tonkotsu ramen, true to the small-scale establishments that can really be found everywhere in Japan.
On the strength of its success from the outset, Hakata Choten introduced a take-away service, and here it’s the gyoza– small pork ravioli with a very thin dough, steamed and then grilled – that take pride of place. In 2004, thanks to their recipe and the chef’s skill, these gyoza won first prize in a national gyoza competition organized by a Japanese TV show.

Hakata Choten is a ramen restaurant specializing in authentic tonkotsu ramen. Tonkotsu, literally “pork bone”, is a soup made from the best extract of pork bone broth simmered for over 24 hours. This is the sophisticated recipe, a “purified” version with no added chicken broth or soy sauce.
Hakata Choten is the very first ramen restaurant in Paris to specialize exclusively in tonkotsu soup.
New room upstairs
Since October 2015, Hakata Choten has opened a 14-cover room upstairs, to complement the 22 covers on the first floor.
