Guillaume Anor, new head of Agapa

 

Guillaume Anor has worked for some of the world’s finest Michelin-starred restaurants, and is now in charge of the restaurant at the luxury Agapa hotel in Perros-Guirec. An opportunity to get to know him better!

Why did you choose to join the Agapa restaurant?

For me, it’s a very beautiful establishment with great potential, to be so close to the sea and to be able to cook in a way that focuses on the product, the taste and that goes very well with the place. And it’s a challenge to be able to keep the Michelin star and showcase my cuisine in Brittany, with Breton products and a touch of the south.

What’s your background?

I started at L’Oasis in Mandelieu la Napoule, with 2 Michelin stars.

Then I moved up to Paris and worked at Le Taillevent with Alain Soliveres, 3 Michelin stars, then at Le Meurice with Yannick Alleno, 3 Michelin stars, with Jean-François Piège at Le Crillon, 2 Michelin stars, with Alain Llorca at Le Moulin de Mougins, 2 Michelin stars, as second chef, then I followed him to the Hôtel Belles Rives. After he left, I took over as head chef for 8 months. Then I was assistant chef to Mr. Ducasse at the 3-star Michelin Plaza Athénée for 5 months, but I wanted to become a chef again, so while I was waiting to find a chef’s position, I went to work as assistant chef to Mr. Gilles Goujon at the 3-star Michelin Auberge du vieux puits, and now as chef at Agapa.

What are your sources of inspiration?

The local products that are offered to me and that I discover to emphasize them with some products of the south by combining the 2.

 

Will you be adapting the map to the region ?

Yes, that’s my first concern, to be able to find the small local fishermen or other small farmers who can bring me a lot while adding a little southern touch.

 

Do you have any other projects?

For the moment, no, I’ve only just arrived. I want to show people my way of treating products, my vision of things and make customers happy to come to AGAPA, and then we’ll see.
