
One year after opening Le Mas de Boudan in Nîmes, the former chef of Le Castellas in Collias (30) earns a star in the 2016 edition of the Michelin Guide.
On December 1, 2015, Jérôme Nutile inaugurated his gourmet restaurant, Le Mas de Boudan in Nîmes. One year on, almost to the day, the former chef of Le Castellas in Collias (30), who gave up his two Michelin stars to go solo, is back at the top in the 2016 edition of the prestigious gastronomic guide. This Monday, February 1, in the salons of the Quai d’Orsay, the chef elected Meilleur ouvrier de France (MOF) in 2011, received his star from the hands of the Minister of Foreign Affairs, Laurent Fabius.
This new distinction celebrates the creativity of Maison Nutile, located in an old Provencal farmhouse converted into a restaurant around a “three-in-one” concept combining a bistro (the Bistr’Au), a gourmet restaurant and a hotel equipped with three double rooms and one suite. In Nîmes, I started from scratch,” explains Jérôme Nutile. Twelve months on, Mas de Boudan has proved a success: the Bistr’Au is fully booked all year round, and the gastronomic restaurant has taken off. In 2016, we’re going to start with a complete renewal of the gastronomic menu: new flavors, new textures, and a presentation of dishes that emphasizes aesthetics.” Among them will be the famous “in a light broth with Paimpol coconut beans” and “Aubrac beef in three versions”, two of the chef’s specialties that accompanied his rise to Michelin-star status in 2006 and 2009.
