After last fall’s vegan tea time, the Shangri-La is asserting its green side for summer 2017 with a 100% plant-based menu for its luxurious terrace, La 8 Iena.

The reopening of the Shangri-La’s terrace, La 8 Iena, delights Parisians in search of an intimate, exclusive setting every summer. This year, the palace’s terrace offers a trendy new feature: a 100% plant-based menu by Chef Christophe Moret.

After a visit to the Palais de Tokyo or an outing to the Musée Galliera, head to Shangri-la for a healthy, ultra-tasty lunch. While the chef’s dishes feature seasonal vegetables, there’s plenty of flavor to go around.

On the menu, let yourself be seduced by a velouté of glazed peas, chamallow and mint, by a “riviera” Fougasse garnished with artichokes, gros violet and black olives, accompanied by a salad with fava beans, diced cucumber, fresh tomatoes, avocado, coriander, parsley and arugula, or by Riso La Renta and its pan-fried cherry tomatoes from Ferme des Cailloux, tomato juice, citron and red onions.

Desserts are no exception to the 100% green rule, with a cart of homemade vegan ice creams and sorbets. Looking for an even more gourmet end to your meal? Put your trust in Michaël Bartocetti, the hotel’s head pastry chef, and his creations. Jasmine Pavlova with citrus meringue, jasmine tea-scented cream, strawberry granita or coconut/vanilla rice pudding: you’re spoilt for choice, because vegan is not synonymous with frugal at Shangri-La.

This approach would not be complete if the beverages on offer were not equally ethical. You’ll find organic wines, fair-trade, hand-harvested teas, coffees and unroasted chocolates, gluten-free beers and organic juices to complete your gourmet break.

Last but not least, cocktails by Chef Barman Clément Emery complete this green experience, with fresh, daring creations that pay tribute to the passion for botany of Prince Bonaparte, the former owner of the premises.
