Bursting with light
Like candles and their glowing flames that adorn festive tables, this log reveals the brilliance of flavors in three tasting stages, symbolized for each slice by 3 spheres, arranged on a thin slab of dark chocolate.
We start with the white sphere, a chocolate shell revealing a crunchy 70% cocoa dark chocolate cookie, contrasted with a light milk chocolate and caramel mousse, a Tahitian vanilla cream and a tangy passion fruit compote.To enhance the tasting experience, we unravel the mystery of the second red sphere in white chocolate topped with a mango and passion fruit coulis.
A third sphere of milk chocolate, powdered with shimmering gold and topped with a creamy passionfruit caramel, brings this delicate moment of tasting to a close.
The originality of this dessert also lies in its ingenious design. Each plate of three spheres divides easily, for a service that’s both simple and perfect.

“For this playful, gourmet end-of-year log, I chose to work with Tahitian vanilla for its roundness and strength, passion fruit for its acidity, mango for its freshness and, of course, milk chocolate caramel for its gourmet, reassuring quality.
