End-of-year festivities at Le Meurice: two original creations by Chef Cédric Grolet!
For the festive season, Cédric Grolet, Pastry Chef at the Le Meurice hotel and recently voted “World’s Best Pastry Chef 2018” by the World’s 50 best, is returning to the traditional tastes that marked his childhood, and giving pride of place to chestnuts.
As we all know, Chef Cédric Grolet likes to follow the seasons, and what could be more seasonal than chestnuts, which from November onwards are offered hot for sale in the streets of Paris. It’s also an opportunity to revisit one of his signature desserts, Mont-blanc.
In the store: the poached chestnut Christmas dessert:

Chestnuts are difficult to work with, and often result in desserts that are a little too sweet. To make up for this, Chef Cédric Grolet has chosen to make all his preparations from the raw product. So it’s with fresh chestnuts that the Chef and his teams have created the new version of Le Meurice’s Christmas log.
Whether mousse, cream, chips or glazed, the chestnut here comes in a multitude of textures, counterbalanced by a roasted chestnut cookie with hazelnut praline, all enhanced by a lemon gel that adds perfect balance to the dessert.
The result is a light, gourmet treat that’s sure to delight sweet tooths at the end of the year!
The poached chestnut log, available to take away from December 18.

At the Dali restaurant: the smoked chestnut Christmas dessert

Although visually dissimilar, the composition of the log remains identical… except for one detail! Each chestnut in the log has been smoked beforehand. The result? An even more intense creation, with tenfold flavour enhancement. A true taste experience!
The delicate milk chocolate shell conceals the mousse and its creamy chestnut heart, as well as the crunchy chestnut/lemon hazelnut praline cookie.
La Bûche au marron fumé is to be discovered at Restaurant Le Dalí, from December 5 to 31, 2018, (every afternoon from 3:30pm to 6pm except December 25), for Lunch or Dinner 25 euros a slice.
