COOKING TO SHARE

For Les Bains, Brazilian-born Chef Bruno Grossi has imagined a menu in his own image: accessible and passionate.

A native of the Nordeste region and the son of restaurateurs, he left his homeland at the age of 18 to live in Paris, where he honed his skills in the finest restaurants.

Bistrot d’Arsène (8th arrondissement), Angle du Faubourg (Groupe Taillevent). He joins the stars at Marculs, double starred in London and triple starred Guy Savoy in Paris.

From the great tables he kept the rigor and technique. An agitator of tastes, he prefers to travel to Italy and Florence, and is passionate about his family’s suivine. A free spirit and a cuisine that’s relaxed, authentic, creative and full of influences. Just like Roxo.

Snacks

In the first half of the evening, Roxo’s menu brings the Mediterranean to life. On the menu: Beef Burger and Makis in lollipop format.

Latin instincts continue, with the truffle croque-monsieur the star of the show.

The plates

After the aperitif, Roxo expands its menu. In the lounges or at the table, you can enjoy the chef’s plates, recommended at 3 per person.

Southern-style grilled octopus, Iberian beef cecina and tomato coulis.

The perfect Franco-Brazilian pairing with mackerel marinated in passion fruit and corn espuma.

Asian heat in kimchi ravioli format.

Bon goût à la française au Suprême de volaille rôti …

And for dessert: the delicate fig cheesecake, a sure bet. The acai sorbet and chocolate-lacquered tart for a dose of sensuality.

COCKTAILS WITH A STORY

Every night of the week, every night of the year, Roxo runs its cocktail bar.

The Dream Team at the shaker includes: head bartender Eric Sablon, who has worked at Night Flight, Hôtel du Grand Pigalle and Prescription Bar, and Benjamin Cousseau, reigning French cocktail champion and winner of World Class France.

Sébastien Serra, renowned bartender at Bel Air and Golden Promise (Maison du Saké), Pietro Costamagna from the Italian bar and restaurant Grazie, and Cyril Pouvich, bar assistant, complete the team.

Around the bar and in the dining room, the Roxo squadron delivers a menu of timeless cocktails inspired by the premises and divided into 4 chapters: 4 eras in the history of Les Bains. Creations always and the great classics made to measure.

On the Roxo menu, the Café des Bains Guerbois tradition is preserved.

Café-calva reinterpreted. A clarified coffee on a base of port, dates and cumin, all the aromas of the Orient infused and a shot of Calvados to pour.

L’Heure de Proust pays tribute to one of its devotees, drawing inspiration from the Les Bains Guerbois line of in-house fragrances.

On the menu, notes of grapefruit, blackcurrant and blackberry: a “very madeleine” cocktail.
