Les Etangs de Corot is a group of hotels, spas and restaurants located in Ville d’Avray. Just west of Paris, Ville-d’Avray, birthplace of Les Etangs de Corot, is an unspoilt commune where many artists and writers have chosen to live for the past two centuries, away from fashion. Founded in the Middle Ages in the heart of a woodland clearing, the village has succeeded over the centuries in cultivating its verdant setting and the beauty of its ponds, which are the basis of its unique appeal.
Les Etangs de Corot stands at the heart of this history and a bucolic environment miraculously untouched for over a century and a half. The Auberge Cabassud began life as a famous guinguette in the 1900s.
Les Etangs de Corot is now a listed site, a haven of peace and quiet away from the stale air and noise of the capital. The hamlet, which became a hotel in 2001, was built to take full advantage of this exceptional natural setting on the outskirts of Paris.
A setting that inspired Alice and Jérôme Tourbier, who founded Les Sources de Caudalie***** in 1999.

We discovered Remi Chambard’s cuisine at the Michelin-starred Corot restaurant. True to the spirit of the place, the chef took us on a timeless journey in these magnificent surroundings. Meticulous, visual and poetic!
After honing his skills with some of the world’s greatest chefs, from Jean Marie Gautier at the Hôtel du Palais in Biarritz to Didier Aniès, head chef at the Grand Hôtel du Cap Ferrat, Rémi Chambard became Nicolas Masse’s sous chef at Les Sources de Caudalie in 2009. 2 years later, Alice and Jérôme Tourbier asked him to take charge of the kitchens at Etangs de Corot, at the age of 28.
Le Corot: French culinary tradition revisited
At the heart of Rémi Chambard’s cooking is the produce. He always chooses seasonal produce, sourced directly from suppliers. And he likes to tell his customers the story behind them.
“Customers like to hear explanations. So I tell them that I discovered an extraordinary saffron producer at the Versailles market, or that the poultry comes straight from a farm in Normandy.
On the plate, freshness and aesthetics are the order of the day, as in the crab cannelloni with watercress, lemon and radish. Or girolles with foie gras and smoked eel. We’ll leave you to discover the menu.
But it’s also the history of the place that you’ll find at Le Corot. Reproductions of the painter’s paintings mingle with trophies of deer heads, evoking the game-filled history of the surrounding forest. This refined setting opens onto the gardens, a perfect backdrop for both intimate dinners and business meals. The adjoining private lounge is ideal for intimate family or business events, with a breathtaking panoramic view over the ponds from its private terrace.
