After a successful season for Yannick Alléno’s restaurant at the Hôtel Hermitage Monte-Carlo, Monte-Carlo Société des Bains de Mer is preparing to welcome Pavyllon to Monaco from April 15, 2022.
Developed by the Chef at Pavillon Ledoyen since 2019, Pavyllon will take up residence from April 15, 2022 at the heart of the Monegasque palace, in a new interior designed by Chahan Minassian and on the restaurant’s splendid terrace.
On the menu: tasty, refined cuisine, an elegant setting around the signature counter, and a resolutely modern, accessible and relaxed spirit. A new must-visit address for Monegasques

Bar food makes its debut in the Principality
The Hôtel Hermitage Monte-Carlo is home to a table that challenges the codes of the great traditional restaurant. Monte-Carlo Société des Bains de Mer and Yannick Alléno have chosen to export Pavyllon and its gastronomic counter to the Riviera.
An exceptional setting by Chahan Minassian
Yannick Alléno has once again called on interior designer Chahan Minassian , whose style is both luxurious and refined, with an eye for the interplay of materials and textures. Total trust was established between the Chef and the interior designer”. Our approach is the same: he in the plate, me in the space. We complement each other naturally, and for this project we worked hand in hand. “. Both have one and the same objective: to give pleasure, offer absolute comfort and appeal to all the senses.
Chahan Missanian designed an impressive counter in metallic wood, opening onto a kitchen with geometric tiling punctuated by small smoked mirrors to provide views of the sea. The shimmering materials – velvet and suede for the seats, ceruse oak panels on the walls – the contrast between muffled and shiny, the soft coloring in shades of gray-green, each element has been designed as a subtle reminder of the nature and Mediterranean surrounding the restaurant.
