Guy Savoy, Laurent Jacquet (manager) and Stéphane Perraud (chef) have come up with a new proposal for Les Bouquinistes restaurant, with a new menu and… a fresco by Fabrice Hyber! The place is well worth a visit.
In the kitchen, Guy Savoy and Stéphane Perraud have designed a menu that is both academic and innovative. “Together with Guy Savoy, we redesigned the entire menu, taking care to retain the Bouquinistes signature that has made the Maison such a success since 1994,” explains Stéphane Perraud.
The restaurant’s architecture, designed by Jean-Michel Wilmotte, now features a fresco by Fabrice Hyber, specially created for the restaurant. The artist “hybridized “* the space with his work “Menu-Mental”, a large page of writing and illustrations on the theme of gastronomy.

The fresco contains numerous references and translations (in English and Chinese) relating to the world of cooking, pleasure and play. These elements are the start of a creative process that will regularly “feed” Les Bouquinistes with new objects, prototypes, sculptures… The restaurant becomes a test workshop… a first!

The menu features new, more affordable formulas – starter/main course/dessert at 36 euros and a six-course tasting menu at 78 euros. As far as the menu is concerned, mackerel in muscadet, thyme-lemon sorbet, swimming in vinaigrette now rubs shoulders with suckling pig confit, lentils simmered in its own juice. The tuna is also divine.
