My grandmothers’ heritage

In her restaurant on rue d’Assas, Helène Darroze offers a formula inspired by her grandmother’s recipes.

“I was born into a family where eating well and sharing around a casserole dish were an art of living, and cooking and pastry-making were passions and religions.

In this family, whether you were a cook by trade, a butcher, a carpenter, a grocer or a schoolteacher, it was your duty and your desire to pass on: to pass on values, to pass on a history, to pass on knowledge, know-how, technique and, of course, to pass on recipes”.

Through a series of tapas, dishes and desserts Helene Darroze has chosen to serve in the Salon of her Parisian home , “L’héritage de mes grand-mères” is an opportunity for her to pay tribute to all those women who passed on to me their cooking philosophy and culture, as much as their recipes. These are traditional preparations (with a twist), which might sometimes be considered too classic coming out of the kitchens of the rue d’Assas, but which, more than any starred creation, require know-how, mastery, rigor and respect. Through these “madeleines de Proust”, she wanted to call upon the memory and thank these “grandmothers” who “bequeathed me their recipes, but also their values, and who made me the passionate cook that I am”.
