For Valentine’s DayDenis Ruffel has decided to work on a classic: the Saint Honoré. Visually, it’s a mouth-watering heart to behold, gustatively, you’ll discover a shortbread pastry, choux pastry and small caramel-crusted choux filled with a lightened Italian meringue pastry cream sprinkled with small pieces of pistachio: a treat that will melt the sweetest hearts. This year, the Jean Millet patisserie celebrates its 50th anniversary, and something tells me they’re not done surprising us yet.
