Since its creation in 1991, the L’Esturgeonnière fish farm, nestled in the heart of the Teich forest on the Bay of Arcachon, has established itself as one of France’s leading caviar producers. Caviar Perlita, the emblematic brand of the Aquitaine region, is renowned for its craftsmanship and constant quest for excellence. Handcrafted, responsible production

The production of Perlita Caviar is the fruit of a rigorous process, entirely mastered on the L’Esturgeonnière site. The story begins in spring, when 100,000 Acipenser Baeri fry are born in the hatchery. Only the very best are selected to continue their growth in tanks fed by the constant, pure water of the River Leyre. After 8 to 9 years, the female sturgeons are ready for harvesting, after a meticulous ultrasound check to ensure grain quality.

This artisanal approach is coupled with a strong commitment to sustainable development. Located in a protected natural environment, Perlita has installed filtration systems that are unique in Europe, guaranteeing that the water is always clean and pure for its sturgeons. The farm also uses renewable energy, with the installation of photovoltaic panels, aiming for energy self-sufficiency by 2025.

A range of exceptional products

Caviar Perlita offers a wide range of caviars, each distinguished by unique characteristics. The classic Perlita Caviar, appreciated for its finesse, offers grains at least 2.6 mm in diameter, with delicate flavors of butter and fresh walnut. For lovers of larger grains, Perlita’s RARE range offers roe larger than 2.8 mm, carefully selected for an even richer taste experience.

The year 2024 marks an important milestone with the arrival of Caviar Osciètre, from the emblematic species Acipenser gueldenstaedtii, native to the Caspian Sea. This new product seduces with its delicate texture, lingering aromas and brilliant brown highlights, making every tasting experience an exceptional moment.

A Unique Visitor Experience

Caviar Perlita not only produces exceptional caviar, it also shares its know-how with the public through guided tours of its farm. Visitors can discover every stage of production, from the hatchery to grain processing, via the ponds where the sturgeon grow. These tours end with a tasting session, where the subtlety and long finish of Perlita caviars can be fully appreciated.
