François Perret, renowned for his innovative approach to patisserie, has designed a book entirely in chocolate, paying tribute to Marcel Proust’s passion for hawthorns. The cover, a double shell in 64% Equator dark chocolate, contains a hazelnut praline accompanied by a crunchy crumble, promising an exceptional taste experience. Inside, six pages of white chocolate reveal the text “Au seuil du printemps”, screen-printed in dark chocolate. Originally published in Le Figaro in 1912, this extract from the “Vacances de Pâques” chronicles celebrates the rebirth of spring through the imagery of hawthorns, dear to the writer’s heart.
