Its magnificent, fairly deep color offers an extremely fine effervescence that rises in regular, vertical chimneys, topped with elegant lace bubbles.
The first, rather discreet nose opens with noble aromas of sponge cake, grapefruit, orange peel and almond.. We then perceive a more exotic character with passion fruit, pineapple, lime, sea cineraria and seaweed. Finally, the brioche finish whets our appetite. The nose is complex and original.
The palate is delicate and soft, with an effervescence that immediately melts into the body of the wine. Its unctuous texture, particularly tasty and suggesting umami, gives a feeling of comfort. The acidity increases in strength as the tasting progresses, kicking off the finish. The finish is very long (over 10 seconds) and sapid (sweetness, salinity). It fades to a chalky minerality and aromas of honey and candied-fruit brioche.
With its creamy texture, Paradis Brut Blanc 2013 is perfect with the most tender fish, shellfish and poultry, accompanied by creamy or buttery sauces. Langoustine is a perfect match.
