Hendrick’s ephemeral bar opens this summer at the Mandarin Oriental, Paris.

Until October 6, 2018, the garden of the Mandarin Oriental, Paris will be decked out in the colors of Hendrick’s gin and offering a menu of new and innovative cocktails created by its new head bartender, Judicaël Noël, on the terrace of Bar 8.

Having joined the teams at Mandarin Oriental, Paris last spring, Judicaël Noël created spectacular, avant-garde cocktails for the Hendrick’s ephemeral bar, inspired by the world of the famous Scottish gin brand.

In particular, he imagined two cocktails with Raphaël Haumont, a physical-chemistry researcher at the Centre Français d’Innovation Culinaire, which he runs with chef Thierry Marx. These “Cocktails 8.0” are true “drink and chew” cocktails, and will be accompanied by appetizers created by Thierry Marx and pastry chef Adrien Bozzolo, who drew inspiration from the bartender’s recipes.

Served in a teacup as a nod to Hendrick’s gin’s British origins, High Garden is composed of a half-take of Hendrick’s gin, green chartreuse, cucumber syrup, yellow lemon juice and mint bitter, elongated with Champagne. It is accompanied by a gin-infused cucumber fan, and buckwheat blinis, horseradish cream and smoked salmon.

If a cocktail at Bar 8 can now be eaten, a tart can also be drunk! The Sweet Mandarin is a veritable liquid pastry made with Hendrick’s gin, vanilla paste water emulsion, mandarin nectar, vanilla bitter and yuzu juice. It is accompanied by citrus sablé and mandarin-yuzu cream, lime chantilly and black lemon powder.
