OPENING OF SHAKA POKE, DESTINATION HAWAII WITH CHEF’S POKE BOWLS

*The SHAKA is the sign of recognition for surfers. It symbolizes Aloha in Hawaiian culture, a mark of politeness and an expression of a spirit of benevolence.

Originally from Réunion Island, Alexandre Haggai and Etienne Bateman, the founders of this new Parisian chain, just a stone’s throw from Place des Victoires in the prestigious Louvre district, take us on a journey through surf culture and Pokes, the Hawaiian-inspired bowls.

To evoke the atmosphere of the islands, they teamed up with Modely Thibaud to decorate their light-toned restaurant. The young Mauritian painter created a triptych of kakemonos with floral and exotic motifs to illuminate the dining room, while a frieze with tribal motifs decorated the walls in the kitchen.

Their desire? To share balanced, exotic food. To imagine their recipes and offer the best products, they set the bar high by calling on Anthony Denon, former Chef to Alain Ducasse at the fish restaurant RECH, now Chef alongside Christophe Saintagne at Papillon. A sincere, responsible and gourmet approach toPokes with a bistronomic accent.

Each product is carefully selected for its taste, nutritional qualities and origin: salmon from Iceland raised in natural waters, wild red tuna from the Indian Ocean, black rice from Italy… Vegetables, fruits and seeds enhance each bowl. The ingredients are marinated, seasoned and cooked before being assembled in tasty recipes.
