Behind this exceptional cuvée lies a challenge that Erick De SOUSA and his family set themselves: to work exclusively with Pinot Noir, a noble grape variety from the terroirs of Bouzy and Tour-Sur-Marne, which has been sublimated by three years of cellar ageing. Harvested in 2012, this cuvée first benefited from 10 months’ vinification in oak barrels before being bottled in 2013.
After the bâtonnage and poignage phases in the cellar, Maison de SOUSA can boast a champagne with a pale yellow color, white gold highlights and delicate red fruit aromas. This Champagne Grand Cru Blanc de Noirs is astonishing because it allows the most surprising culinary combinations: serve it with charcuterie, seasonal mushrooms, cheeses or, even more surprising, with small game birds. Ideal for your end-of-year meals!
In keeping with his insistence on quality and precision, Erick De SOUSA has deliberately limited this cuvée to just 3,900 examples. An exceptional cuvée in more ways than one, and not to be missed!
