This year FAUCHON is offering a Valentine’s Day under the sign of romance with its new French Romance collection, available from February 1, 2016, which celebrates Toile de Jouy.

For the first time, FAUCHON is playing the Cupid’s game, helping lovers to reveal their declarations of love, through customizable messages integrated into a sphere that refines the unique and exceptional creation, created by Chef Patrick Pailler.
This heart-shaped dessert is composed of a crunchy crumble, topped with a soft lime cake, a fresh raspberry compote and a lemongrass-scented Madagascar vanilla mousse.
Four small raspberry choux set in a silver sphere of white chocolate crown this creation. A declaration of love, an engagement or wedding proposal, these entremets can be used to send any message you like.

TRUFFLE HEART
For lovers of savoury notes, Chef de Cuisine Sébastien Monceaux has thought up a combination of land and sea, for a gourmet entremets.
On a heart-shaped dacquoise cookie colored with cuttlefish ink, puff pastry is garnished with slivers of French scallops, mixed with a fine brunoise of baby vegetables and black truffle chips. Each cabbage is crowned with slivers of fresh Tuber melanosporum black truffle. A voluptuous mascarpone and black truffle cream, spiked with English-cooked vegetables for added freshness, forms the heart of this entremets. Slivers of scallop, pink orchid petals and gold leaves complete the bouquet.
