Barely three months after his arrival at the Shangri-La Hotel, Paris, Pastry Chef Michaël Bartocetti unveils his “Sphère de Noël” log: a delicate creation, combining the crunch of chocolate with the freshness of fruit and citrus.

Delicately crafted in dark chocolate, it features a soft chocolate cookie surrounded by a hazelnut crunch. At its heart, a delicious lemongrass-scented pure Madagascar chocolate mousse reveals an unctuous, tangy mandarin and yuzu confit, adding a touch of the exotic.
Like a Christmas bauble, this log, all round and light, will seduce young and old alike, plunging them into the magic of the festive season. We were seduced by its lightness, and the gamble paid off!
