To celebrate Epiphany, Nicolas Jaulmes, Pastry Chef at the Buddha-Bar Hotel Paris, revisits the galette des Rois with a trendy version.
Inspired by pocket cakes, this mini-galette is a real winner. Dazzling inside and out, it features a creamy almond mousse, bursts of sugared almondsand a traditional frangipane base reminiscent of childhood flavours.
Served on a plate, an emulsion of almond milk, agave syrup and a few drops of amaretto borders the light puff pastry, adding a touch of freshness.
