CHEF CYRIL KRIEG’S NEW MENU, BACK-TO-SCHOOL SIGNATURE RECIPES

ISTR launches its evolving seasonal menu, devised by resident Chef Cyril Krieg. As usual, this autumn ISTR is offering a menu based on the Chef’s market cuisine, with “land and/or sea” recipes based on seasonal arrivals, blending tradition and innovation. New creations are offered every week, while maintaining the classics, including seafood, the Chef’s pate en croûte and now the Oyster burger.

Among the season’s must-tries, on the left, the minute-smoked French veal tenderloin, grenailles, shallot confit (300g), and on the right, saithe ceviche with ras el-hanout spices.

For the new season, the comptoir gourmand du Haut-Marais is launching a rich menu to suit all tastes, from a selection of fresh small plates (from €9) to shellfish (from €6), oysters (from €6 for 3 pieces), main courses (from €19) and desserts (from €9).

Among the season’s must-tries, on the left, snacked langoustines, artichokes, Ibaïona bacon,
and on the right, cockle & coconut marinière from Paimpol, olive oil and green zebra.

BACK-TO-SCHOOL CULINARY INNOVATION, ISTR “OYSTER” BURGER

Made with fresh produce of a rare quality, this recipe, new to the Parisian panorama, is elegantly inspired by the codes of urban cuisine, and revisits the classic burger with a daring and surprising iodized touch.

The oyster burger consists of two tempura oysters (special n°1), prepared with rice flour, beer and fresh coriander, to retain all the crispiness, softness and salty taste of seafood. This oyster burger is generously topped with pickled wakame seaweed, mature cheddar cheese, thinly sliced cucumber and romaine lettuce.

The burger is served with a light, homemade mayonnaise made with crabmeat and lime, all seasoned with a secret sauce that adds a sweet, gourmet note to the preparation. To accompany the burger, ISTR offers a seasonal salad for a tasty combo filled with freshness and a unique culinary experience. The ISTR burger costs €25, and is available à la carte, takeaway and delivery throughout Paris.

Since April 2020, ISTR has gone digital with “Shake ISTR easy”. It’s now possible to order homemade cocktails and fresh produce ready to enjoy at home. Delivered within 30 minutes anywhere in the capital, each cocktail is made to order, dated and carefully packaged by the ISTR team. In addition, ISTR offers an online gourmet menu, designed for “bistrônomes”, with a selection of inspired dishes, fresh oysters and seasonal recipes, as well as a selection of wines and non-alcoholic beverages for delivery on : istr-commande.fr
