Today, it continues to reinvent itself by teaming up with Fulgurances, a recognized incubator of nouvelle cuisine, for a series of exceptional dinners in 2024. This collaboration, dubbed “Les seconds sont les premiers”, celebrates the meeting of two worlds passionate about the art of living, sharing and culinary innovation.

Maison Thiénot, run by Garance and Stanislas Thiénot, children of founder Alain Thiénot, has always been keen to support new generations and encourage the emergence of promising talent. Their association with Fulgurances, a key player on the contemporary gastronomic scene, is part of this visionary approach. Together, they offer a unique platform for the expression of talented up-and-coming chefs, enabling them to take the reins of the restaurant L’Adresse by Fulgurances, located at 10 rue Alexandre Dumas in Paris.

A Program Celebrating Creativity and Excellence

Every month, the “Les seconds sont les premiers” event gives a second chef from one of the great houses the opportunity to take charge of L’Adresse. This restaurant, a veritable springboard for future top chefs, enables them to reveal their culinary creativity through themed dinners in perfect harmony with Thiénot Champagne cuvées. Six dinners, six different gastronomic expressions, will sublimate the house champagnes, offering guests a unique sensory experience.

The Alliance of Tradition and Innovation

This partnership perfectly illustrates the values shared by Champagne Thiénot and Fulgurances: a deep respect for tradition combined with boundless creative audacity. The chefs invited to participate in these dinners embody this duality, proposing menus that marry classic flavors and modern techniques, while remaining faithful to the essence of Thiénot cuvées.

Among the chefs who have already taken up this challenge are such talents as Olivier Mc Georges, former second-in-command to Guy Savoy, and Sam Finnie, of London’s double Michelin-starred Da Terra restaurant. Their mission: to interpret Thiénot champagnes, whether Cuvée Garance or Cuvée Brut, with sensitivity and creativity, revealing all their nuances.

A Commitment to the New Generation

At the end of this gastronomic year, Champagne Thiénot will award a 5,000 euro scholarship to its “Chef Coup de Coeur”, an initiative that underlines its commitment to training and supporting young talent. This bursary represents a further step in the company’s support for the chefs of tomorrow, offering them the means to pursue their culinary exploration and realize their ambitions.

Dinners to Awaken the Senses

Thiénot x Fulgurances dinners are not only gastronomic events, but also moments of sharing and transmission. They allow chefs to express themselves freely, without barriers or limits, and offer guests an immersion into their culinary universe. Guests have the opportunity to discover original creations, surprising food and wine pairings, and contemporary cuisine of the highest quality.

The first dinner in this series took place on July 1 with Canadian chef Jules St-Cyr, who brought his experience from renowned kitchens such as Noma in Copenhagen and Carousel in London. Further dates and chefs will be announced shortly, promising ever more astonishing discoveries.

Fulgurances: A Talent Incubator

Since its inauguration in 2015, Fulgurances has established itself as a major player on the Parisian culinary scene. L’Adresse, its restaurant in Paris’s 11th arrondissement, has become a must-visit venue for haute cuisine enthusiasts, offering an exceptional showcase for chefs in residence. In 2020, Fulgurances expanded its footprint with the opening of a dining and drinking cellar, as well as L’entrepôt in the 14th arrondissement, and even crossed the Atlantic to open Fulgurances Laundromat in New York in 2021.
