LAURIER, in Greek Daphne (Δάφνη), is a tribute to this emblematic plant of the Mediterranean basin, made famous by a striking episode in Greco-Roman mythology.

Mediterranean cuisine, between tradition and modernity

Led by chef Andréas MAVROMMATIS, Laurier offers Mediterranean and Hellenic cuisine that’s both centuries-old and resolutely contemporary.
His approach reflects his vision of cuisine: to offer generous dishes, revisiting the great classics of this ancestral culinary tradition while respecting them, with a focus on simplicity and authenticity of taste and flavor.

Everything served here is “homemade”, as the chef makes sure.
The restaurant-tea room offers its customers non-stop service, both sweet and savory. From the essential lunchtime menu (starter/main course or main course/dessert), to afternoon gourmet breaks and after-work drinks, there’s something for everyone!
Laurier offers its customers the opportunity to continue the experience at home, with take-away pastries and various Greek grocery products, such as olive oil and honey… the fruits of MAVROMMATIS know-how.

A highly symbolic name

According to Ovid’s account in his famous Metamorphoses, the nymph Daphne transformed herself into a laurel tree to escape the advances of the god Apollo. Out of love for her, he made her a consecrated tree, used by his famous priestess, Pythia, to perform her prophecies.

A symbol of victory and wisdom, since ancient times the laurel wreath has adorned the foreheads of great men: leaders, poets and scientists.
An emblematic plant that links the Mediterranean basin, laurel’s virtues include stimulating the appetite and aiding digestion. In the kitchen, aromatic bay leaves are used to flavour sauces, stews and marinades.

An exceptional setting with Homeric inspiration

The restaurant’s layout is the work of Régis BOTTA. A talented architect, he had already designed the interior of the Michelin-starred restaurant Le MAVROMMATIS, one of the jewels in the crown of the eponymous Maison. In keeping with the restaurant’s name, he gave laurel a prominent place in the decor.

An adept of purity, he imposes geometry on his spaces and considers light as a mass to be sculpted.
For his furniture and choice of materials, he draws his inspiration directly from antiquity, in particular the classical era, the apogee of ancient Greek civilization. All the furniture was specially designed and made for the occasion, making this a unique place.

Sitting down to dinner at Laurier combines a relaxing meal with a magnificent view of the Champs-Elysées.

Tailor-made equipment

To set itself apart, LAURIER has an important asset: its vertical rotisserie! Designed by Chef Andréas MAVROMMATIS himself, it was specially conceived for his kitchen.
Thanks to this ancestral vertical cooking method, food doesn’t cook above the flames, but alongside them, in the heart. The result: juicy, tasty and healthy meat and vegetables.

As a result, this appliance enables outstanding, healthier cooking. It prevents the “Maillard reaction”: the organic reaction responsible for producing the characteristic odors, aromas and pigments of heated food (browning and “cooking” aromas).

Vertical skewer cooking is made possible by our unique rotisserie. Healthier, it magnifies products and releases the full aromatic power of different flavors.

this pistachio enjoys a reputation for excellence, and has benefited from an appellation d’origine contrôlée since 1994. They give our macaroon a unique flavor, subtly enhanced by a rose-scented citrus juice.
