The Hôtel du Louvre’s gourmet winter log, by Julien Delhome, the hotel’s head pastry chef

Julien Delhome, head pastry chef at theHôtel du Louvre, helps us rediscover the traditional Yule log, in keeping with his gourmet pastry technique.

This year, the chef’s aim is to rediscover the codes of a real log, both visually and in terms of taste.

Composed of a soft hazelnut cookie with Chestnut honey, a hazelnut crunch, a rolled cookie with thyme-lemon praline, a creamy milk chocolate mousse and a Gianduja glaze, this emblematic dessert is inspired by the winter season.

The woody color and chocolate chips are reminiscent of the fir tree characteristic of December, while the Chestnut honey is a nod to this tree whose fruit gently heralds winter.

With his thyme-lemon praline, the chef honors L’Officine, the Hôtel du Louvre’s restaurant with its many aromatic plants and herbs.

Available from December 19, 2020 to January 3, 2021, this gourmet log must be ordered 72 hours in advance.

For those with a sweet tooth, a slice will be served at l’Officine, for 12€.

A log for 6 people costs €59, for 8 people €77 and for 10 people €95.
