Nust nine months after opening, the Michelin Guide has awarded Chef Alain Pégouret 1 star for his restaurant on the Île Saint-Louis: Le Sergent Recruteur (France, Paris).

A recognition that rewards the boldness of a chef who was not afraid of a blank page, and who in spring 2019 began a new gourmet notebook, this one much more personal and intimate. In his own image and in keeping with the setting, it’s his contemporary vision of cuisine that he interprets at Le Sergent Recruteur: a no-holds-barred version of gastronomy.

For the past nine months, more fulfilled than ever, he has skilfully taken on his new role, a happiness he savours every day with wisdom and determination. His cuisine is refined, elegant, subtle and daring. His gestures are precise and chiselled. He draws his inspiration from daily life: a flavor, a smell, a wine… and tries to bring out the brilliance of each product, the essence that emanates from it.

It’s certainly no coincidence that fate has allowed him to finally make his home at 41 rue Saint-Louis en l’Ile in April 2019. After falling in love with the area and the restaurant 5 years ago during a dinner with friends, it’s like a childhood dream come true. There couldn’t have been a more magical address for Alain Pégouret to hang up his apron and now his star.

Alain Pégouret grew up in Cannes in a family of gourmets. His father, who introduced him to the fine restaurants of the Côte d’Azur from the age of 12, instilled in him a taste for the good and the beautiful. At the age of 18, he obtained his BEP in cuisine in Cannes and moved to Paris to work for Jamin under the great Joël Robuchon, where he was chef de partie for three years. He became second-in-command to Christian Constant at Le Crillon, and followed him to Le Violon d’Ingres, where the stars began to shine. In February 2001, he took charge of the kitchens at Le Laurent, where he remained a Michelin-starred chef for 18 years until 2019.
