Standard-bearers for the expertise of VIGNERONS DES TERRES SECRETES, the “Les Sentinelles” range (like the “Lieux Dits” range) reveals the excellence of Mâconnais terroirs. Offered in limited quantities, this collection of wines is recommended to any epicurean curious to discover the art of living in Southern Burgundy.

The villages of Chaintré, Fuissé, Solutré-Pouilly and Vergisson are the only ones authorized to produce the Pouilly-Fuissé appellation. Exclusively situated on hillsides, the vineyards are planted with a single grape variety: Chardonnay, the noble grape of all the great white wines of Burgundy. Stretching out in a scarf at the southern end of the Mâconnais region, the soils offer a wide variety of substrates, mainly limestone, and a wide range of exposures in an extremely fragmented plot of land.
The high planting density encourages the vines to work hard, in order to obtain small bunches of grapes containing a small but highly concentrated juice. Les Vignerons des Terres Secrètes opt for pneumatic pressing for greater softness. Throughout the winemaking process, Pouilly-Fuissé wines are carefully selected: fermentation temperatures are controlled, cuvées are monitored analytically, and the quality of cooperage wood is particularly stringent.
Generous summer sunshine and a few welcome rains in 2016 enabled us to tackle the harvest calmly. Sanitary conditions were on a par with the 2009 and 2015 vintages. Harvesting began on September 17 and ended on October 10.

Pouilly-Fuissé “Les Sentinelles” 2016 can be enjoyed as an aperitif, but its finesse and elegance make it an ideal mealtime wine to accompany shellfish and cooked fish. Its fullness and generosity on the palate also harmonize well with quenelles, white meats or poultry in cream sauce. Goat’s cheeses from the Mâconnais region are also ideal partners for this Pouilly-Fuissé in its youth.
