For his 2017 Yule log, Arthur Fèvre, Pastry Chef at the InterContinental Bordeaux – Le Grand Hôtel, offers more than just a delicacy: a fairytale interlude! His pastry, made up of six Christmas baubles lined up on transparent bases, as if levitating, reveals the silhouette of a Christmas tree thanks to a play of light and shadow. A gourmet trompe-l’œil that renews the genre, balancing tradition and innovation. To create the illusion, simply activate the luminous device integrated into its elegant presentation box!

The composition is equally original and daring. The six chocolate-covered spheres contain a citrus and coffee mousse created in cooperation with Bordeaux roaster “L’Alchimiste “*. The coffee selected is Kenyan, grown at an altitude of 1685m in the Mount Kenya region. The roast has been specially adapted for this project: it is lighter and faster, to accentuate the fruity, floral character of this coffee, while at the same time presenting a beautiful acidity. The base of each Christmas bauble is made of pecan crunch and roasted coffee.
