A regional appellation, Bourgogne Hautes-Côtes de Nuits can be produced in 20 communes of the Hautes-Côtes and Côte de Nuits. The vines, which produce both red and white wines, are planted between 300 and 400 meters above sea level. After hand-picking, the grapes are placed in stainless steel tanks for 2 to 4 days for pre-fermentation maceration. Alcoholic fermentation then begins, using only the vat feet. Malolactic fermentation and ageing take place in oak barrels for 8 to 12 months.
