For its Christmas foie gras, Comtesse du Barry drew inspiration from the Provencal tradition of 13 desserts.
The whole foie gras reveals a core of lightly roasted dried fruits: almonds, dried apricots, hazelnuts and pistachios, arranged on a bed of honey caramel, with a seasoning of old Armagnac that brings relief to the whole.
