Chef Guy Savoy joins the MAMA SHELTER adventure with a new menu that’s spontaneous, generous and always accessible!

Initially in Paris, Mama Lyon, Marseille & Bordeaux will follow

Serge Trigano and his ls, Jérémie and Benjamin, are now rallying one of the finest talents in French gastronomy, Guy Savoy, to help them realize their democratic dream of a “budget hotel in the noblest sense of the word”.

Because relaxation does not prevent rigor and excellence, the three-starred chef has joined the adventure by signing a new menu: spontaneous, generous and always accessible. Blending the local with a touch of the exotic, Mama’s signature recipes – the coquillettes casserole! – to some of its signatures – the brioche, in a destructured version. “It’s a cuisine that resembles us: at the same time era of its origins and open to the world” underlines the chef. And because sharing and conviviality remain the beating heart of this urban kibbutz, Guy Savoy invites you to share when you least expect it, such as over an original version of the pistachio sausage – vinaigrette, for example.

The founding clan elected Guy Savoy with the same obviousness: “The Mama table is one of the keys to our success. It is around it that spirits gather, that encounters are made, without borders or prejudices, in each of our “family homes”. Only a chef who shares the same values of generous hospitality could sign the simple and reassuring cuisine.
