A few days ago, we discovered a cocktail bar nestled in the middle of the marsh: Resistance.
Résistance takes its name from the proliferation of pretty boutiques in the Marais at the expense of neighborhood bars and restaurants. This new cocktail bar is a showcase that brings together the scent of exclusive mixology preparations and a menu of dishes to share, whose recipes have been designed by David Varnier, Pastry Chef and owner of the place.

At the head of the Résistance team is an exceptional barmaid:
Instinctive and creative, Sasha has developed a unique sense of mixology pairings in the many bars of New York and London, where she has perfected her techniques and discovered new flavors and combinations for the preparations of her creations.
To accompany the cocktails, Pastry Chef and owner David Varnier offers a menu of recipes tailored to lunch and then adapted in finger food format for the evening: savory tarts with original recipes, croque-monsieur with truffles, savory eclairs (foie gras with Espelette pepper, lobster with black garlic, truffles …), puffs and sweet tarts for dessert or tea.
