On the cellar side, there are no less than a hundred references, with a real search for small biodynamic producers. Sommelier Damien Fontaine has a particular fondness for wines from the South of France, such as the Pic-Saint-Loup Mas Foulaquier “Les Calades” 2011 or the Côtes-du-Roussillon “de battre mon cœur s’est arrêté” 2013.
Les Chouettes
Located in the Marais district, a stone’s throw from the lively Carreau du Temple, Les Chouettes restaurant is housed in a former jewelry workshop. Thanks to its Eiffel-inspired architecture, Les Chouettes boasts impressive volumes bathed in light: a huge central dining room on the first floor, a 20-metre glass roof, two circular mezzanines… Quality products, carefully selected.
With its beams, bolts and iron staircases in pure Eiffel style, 550 m2 of rooms and 20-metre high glass roof, the décor is breathtaking. The two-storey passageways are reminiscent of a transatlantic liner bound for America, and the ballet of waiters is watched from the rail.
For a budget of around 35 to 60 euros, chef Alban Drevet and second-in-command Dorian Ibanez offer a choice of six starters, six main courses and six desserts, all of which vary each week according to what’s available, the season and the inspiration of the moment. The cuisine favors fresh produce, with vegetables from Ile-de-France, poultry from Loiret and fish from Granville, and features seasonal dishes such as entrecôte from Uruguay, haddock with beet and mozzarella foam, creamy egg and marinated pig’s cheek, langoustine ravioli flavored with fennel, orange and basil, pan-fried duckling from Dombes, pistachios and butternut coffee.
As for sweet tooths, they won’t be able to resist the Mont-Blanc with clementines, the Guanaja chocolate finger with passion sorbet or the Paris Brest, Croustillant with hazelnuts for long.
