The Prince of Wales presents his Christmas Dessert and Galette des Rois

Yann Couvreur, disciple of pastry chef Jean François Foucher and rising star of the French pastry world, has come up with two desserts for the festive season.
This adept of tailor-made creations takes us on a journey across the Atlantic to Canada.

The Cocooning Yule log, with its highly original shape reminiscent of cosy evenings spent by the fire, was created under the direction of Michelin-starred chef Stéphanie Le Quellec.
Placed on a poplar parquet designed by Yves Loretz, whose surface has been coated with a cocoa butter and chocolate preparation, the creation brings together all the warm flavors of Canadian gastronomy.

We discover a pancake cookie soaked in maple syrup, accompanied by a blackcurrant marmalade, topped with a maple syrup-flavored mousse and a pecan nougatine. The cushions are made with white chocolate.

From December 15, 2014 to January 3, 2015, the Cocooning log will be offered at tea time, in an individual version for 18 euros.
Accompanied by a glass of ice cider – 32 euros.

This year, pastry chef Yann Couvreur revisits the traditional Galette des Rois recipe. He has teamed up with ceramist Sophie Des Courtis, who has designed porcelain beans in the shape of half pecan kernels, each numbered from 1 to 100.

Here, the almond in the frangipane has been replaced by pecan, the layers of puff pastry caramelized with Charentes butter are sprinkled with a few browned walnuts, and then the melt-in-your-mouth pastry cream made from roasted pecans reveals itself.

From January 4 to 17, 2015, the galette des rois will be served by the slice for 18 euros.
Accompanied by a glass of ice cider – 32 euros.
