Champagne Ayala presents the 2007 vintage of its Blanc de Blancs cuvée. In its new gold packaging, Ayala Blanc de Blancs 2007 will be the perfect companion for the festive season.

Blanc de Blancs de Champagne Ayala is produced in limited quantities and only in exceptional vintages, such as 2007. This wine perfectly expresses all the nobility of the Chardonnay grape from the best crus of the Côte des Blancs: Cramant, Avize, Oger, Cuis and Vertus. Its long ageing on the lees (6 years in the cellar), its structure marked by a remarkable minerality and its low dosage of 6g/l make it a high-flying wine, as much at home on a gourmet table as on its own for a distinguished aperitif.

A gourmet champagne
With its bright, luminous gold color and fine string of bubbles, Ayala Blanc de Blancs 2007 offers a subtle nose of flowers, citrus and white peaches, complemented by a hint of clover honey. Remarkably dynamic and fresh, this champagne echoes the floral notes of the nose on the palate, revealing itself to be both lively and well-balanced. The finish is persistent, characterized by its chalky mineral structure. A refined aperitif for discerning connoisseurs, Ayala Blanc de Blancs 2007 is also ideal for magnifying white fish – sea bass, sea bream, st. Pierre – as well as noble shellfish and roast poultry. A truly festive cuvée!
