Pierre Hermé’s Saint-Honoré cake is a marriage of love. The perfect marriage of two flavors. In this Ispahan version, Pierre Hermé brings pink to the choux. A variation on the Saint-Honoré based on the house’s Fetish association reinterpreted. A romantic alliance of ultra-smooth rose mascarpone cream and the refreshing tandem of fresh strawberries and lychees. It’s all laid out on an airy puff pastry and surrounded by soft, crunchy caramelized choux pastries with an outrageously made-up headdress. How beautiful is the rose.
